Numerous studies have found that traditional cooking at high temperatures destroy part of the nutritional content of food. Through the study of hundreds of folk cooking methods, it was found that 105kPa high-pressure fast cooking can maintain the food heating temperature at an ideal cooking temperature of 100 degrees Celsius. This stews the food allowing proteins and other nutrients to dissolve, and thereby retaining nutrients.
